any way to overide AD user fields

Is there any way to modify a field that gets populated by active directory?  We pull in organization (org) for each user from active directory.  This is stored in the user record.  If users call the service desk analysts make a request/incident for them.  Often when the user calls in they are working a job outside their org.  The analysts are not able to change the org.
